Lifestyle Change

I'd like to take a moment to share the lifestyle change that Karl and I haven been taking part in. Before I share what we are doing, let me take a minute to share why we decided to change:

1) Overall health - Not only does this affect our chances of conceiving but also longevity of life
2) Financial health - We want to ensure that we are getting the most out of our money each month and being responsible with our food intake is one way to do so.
3) Spiritual health - It may be weird to think about, but returning to the basics has provided a spiritual change, as well. We have more opportunities to lean on Him since this is all new to us. Not only that but we are also learning more about, and accepting, that He has put things here for us for a purpose.

How did we get started? Well, we have done a few weight loss challenges in the past and they have been ok - losing weight but not life changing. We began the summer on a cruise and - you guessed it - we both gained quite a bit of weight, which is very discouraging, for sure.

Upon returning, I began a Lifestyle Change Competition that I had heard great things about. Our group is the first group to take part in the open competition and we have been having a blast.

You compete both individually and as a team. I love the comradery and encouragement that my team has and I love being on this journey with them. We are currently at the half-way mark and I'm down 11 lbs ands over 5 inches. I've greatly enjoyed the workout videos - which are tough but enjoyable. The thing I've probably liked the most is how they have taught us to eat. Before I thought I could eat what I wanted but just watch my portions (and I was even skewed as to what a portion really was). I have learned through this program the right kinds of foods to eat and when to eat them. It has been a blessing that I will definitely take once we finish the competition and continue to do.

I'm not going to lie - changing the way you eat has it's real challenges. I've had to branch out and try new things. Some I've loved and some, well, let's just say we won't be doing them again. It is a challenge and is frustrating at times but it's definitely an adventure.

For a while now I have been wanting to create a binder of recipes so that I could adequately plan for each week's meals, to ensure we were eating good stuff and that I wouldn't waste produce and other groceries each week. I was finally able to sit down and start ours this week and wanted to share some of our successes so far.

Here's how it works. You find recipes that you would like to try and divide them into the types of meals they are - main, snacks, desserts, drinks, etc. Pinterest is a great resource. I love looking and learning from others.

So, the other night I printed off all the recipes and sorted them. Then I let Karl pick 5 meals that he would like to try for the week. He gave me the ones he liked and then I made a list. The scary part followed - HEB!!! Lol, it wasn't too bad, honest. Here are some of the recipes that we have tried so far and have really liked them.

Paleo Pizza Crust

One of the biggest things that I have missed since starting our lifestyle change has been PIZZA!! So I just had to find a recipe to fill the fix. We made this last night for dinner and it definitely hit the spot. The texture is a little different at first but it's yummy!

Putting it on parchment paper really helped a lot - hint of the trade. ;)

Can you tell which side is Karl's and which side is mine? :)

Definitely yummy!!!!

Having this delicious pizza put me in the mood to keep on cooking. So I continued with another recipe that I had really wanted to try.

I have been looking for a recipe that I could have for a while now and was just a little too excited to make it. I had it today for lunch and it was  . . DELICIOUS! Definitely excited about it!

Yum-o!!

I had to end the day with some sweets so I made some cookies, too. ;) Don't worry, I made a batch for Karl and for me. His has Dark Chocolate morsels and mine had Cocoa Nibs. Yummy!

Even Karl liked them. :) Once again it's a little different texture - especially if you are comparing it to your normal SUGARY cookies. But they are delicious!

So far, so good. We have been pleasantly surprised so far. Can't wait to try some more. :) We'll keep you posted.

If this happens one more time . . .

Anyone know a good cell phone service provider? This is the second time that we worked with someone at AT&T and I am about ready to switch providers. We went in there today to get my phone moved to Karl's plan, which we had to get a form filled out by my mom (well, kinda :), it helps when I can sign like mom; it's not like I didn't have her permission) in order to do so. We walked in and talked to this guy, gave him the form, and we thought that he understodd what we needed to be done and he just started going. We got to the point where I would pick out a phone and he started getting stuff ready and I re-asked him, after he wanted to know what number I wanted to use for it, if my phone was now on Karl's plan and he just went crazy on us. Basically he said that we never told him that that is what we wanted. He was very rude, basically saying that it was our fault that he did all this work for nothing. It was very disheartening and I really wanted to tell him to forge...

New Journey . . . Diamond Club

What does it take to make a diamond? Any ideas? According to Wikipedia, you know the source for all things, a diamond is "formed at high temperature[s] and pressure". Karl and I are excited to announce that we will be taking part in journey. A journey that will, hopefully, push us to Diamond. It will take a lot of work but we are excited for this opportunity for our team. What is Diamond Club? Why is this so exciting? Maybe this video will explain it better. Diamond Club creates a great opportunity for EVERYONE! It allows Karl and I to travel to areas that want to grow and also allows for new members to receive additional products with their enrollment and subsequent LRP orders. Free stuff??? Yes, please!!! It really is a great opportunity for everyone on our team. We are looking forward to the immense growth that will happen because of this wonderful opportunity. So you may be asking, how do I get involved? What does this look like exactly? Basically we...

Writer's Corner Number 8

Typed from written Journal Entry: I thought I’d change it up a bit and try writing in journal form tonight. I am also curious to see the difference in length of writing for both writing formats. Dr. Semingson suggested incorporating pictures into our journal writings/posts. I don’t have any pics from growing up – they are all at my dad’s house in Michigan – but I can start adding new pics from Alaska, especially when it comes time to talk about our honeymoon adventures there. Today I want to start by talking about earthquakes. I want to preface this “talk” with a story from when I moved to Texas. Not long into the start of my 7th grade year we practice emergency drills. I remember one of my teachers talking about what to do in case of an emergency: crouch down with your head near a wall and cover your head. I remember thinking that getting near a wall wouldn’t be the safest thing in the world but I didn’t argue – I didn’t know what that emergency drill was for. Now that I’m olde...
